Vegan Pancakes

Sometimes a plate full of pancakes and some maple syrup is just what you fancy and that doesn't have to stop just because you are a vegan. These simple and easy pancakes are quick to make and taste lovely. If you want to make them either for yourself or if you are cooking for a vegan then here is a simple recipe.

You Will Need

1 Banana
Three 1/4 cups or 60g of Oats
1/2 cup or 125 ml of Almond Milk

This recipe makes 3 to 4 small pancakes or one large one, but if you wanted to make more you can just double the measurements used. Almond Milk is my preference of milk but there are lots of other dairy free milks you can use like rice, oat, coconut or soya.

Firstly what I do is pop the oats into a blender and blend until they make an oat flour. I then add the banana plus milk and you have your pancake batter. The banana acts as the egg in a non vegan recipe and glues the mix together so it does not fall apart.

If you don't own a blender you can easily just buy oat flour in stores, mash the banana in a bowl and whisk the ingredients all together.

I pop a little bit of oil in the bottom of a frying pan and cook on a medium heat. Simply pour your mix in and cook each side for around 2-3 minutes until they are golden brown and you are done.

Usually if I make pancakes in the morning then I will add some maple syrup and different fruit of choice, so for instance on this one I just have some more banana and blueberries.

But if I fancy pancakes as more of a dessert meal then I will add some vegan chocolate sauce on top and coconut which tastes amazing! Even just plain with lemon juice on top they taste really good.

This is just a super quick recipe that I regularly make and then change the toppings. But for myself it is really important to have variety in my food so that I don't just feel like I only have the option of porridge or toast for breakfast. This takes no time at all to make and is completely vegan.
