What I Eat In A Day Vegan

I love all sorts of food posts, but one that I really enjoy reading are the What I Eat In A Day posts. I guess I am secretly nosy and find it interesting to see what other people eat. I don't have a YouTube channel so I can't make a fancy video showing you, but I can type it up for you to read. So if you are interested in what I eat on a vegan/plant based diet then here we go.

Every day is different for myself so I eat what I feel like eating, there are always a lot of debates about the vegan/plant based diet and me personally I just eat what I want without any animal products. I am not gluten or wheat free and I definitely eat carbs. Also this was from yesterday (Sunday) so I had a little more time to prepare meals than in the week days.

Breakfast
-Pancakes with a blueberry & raspberry compote with chia seeds and maple syrup
-Cup of tea with Almond Milk
-Water & Lemon

Oh pancakes my special friend, I make these numerous times during the week, but always a definite on the weekends. They are super easy to make and you can just add whatever topping you want, I will leave the recipe here if you are interested.

Breakfast

*Before lunch, I had a snack of some almonds and a pear, but I forgot to take a picture, so just imagine these here as a late morning snack*

Lunch
-Whole Wheat Pasta with Homemade Tomato Pesto, Cucumber, Nutritional Yeast, Baby Spinach & Pine Nuts
-Water & Lemon

I don't always have warm cooked lunches but on weekends I have more time to cook and eat till my hearts content. I like to add different textures into my pasta dishes, so I added in the crunch of cucumber and pine nuts.

Lunch

Late Afternoon Snack
-Cup of tea with Almond Milk
-1 Berry Burst Trek Bar

I love having a cup of tea in the afternoon, usually with a biscuit or whatever, but I picked up this new Trek bar flavour and ate the whole thing because it was so yummy.

Afternoon Snacks

Dinner
-Linda McCartney Vegetarian Country Pie with Baked Sweet Potato, Broccoli, Cabbage, Carrots & Vegetable Gravy
-Water & Elderflower Cordial

Yes sometimes I cheat and use something from the Linda McCartney range because they are easy to cook in the oven. These country pies are really nice and filling but are also vegan. So for me I find them perfect to keep in the freezer and cook when I don't really feel like making something for myself.

Dinner

I ended up having dinner quite late, so I felt too sleepy to have dessert and went to bed. However most evenings I do tend to have a dessert too but as I said every day is different. 

I really hope you enjoyed reading this post, especially if you are finding yourself interested in vegan and plant based food. For me these sort of posts were always what I found myself reading (or watching videos) to learn more about what you can eat.
